Living Juice


Dr Norman Walker devised the concept of ‘Living Juice’. He found that at temperatures higher than 50 degrees Celsius, the enzymes in vegetables and fruit die. This meant that juice extractors reliant on high-speed blades or centrifugal force, which create friction heat, were also capable of destroying the natural enzymes in fresh produce – and therefore lower in nutritional value.

Single gear horizontal juicers

Masticating juicers

Common misconceptions about juicing


Juicers and Blenders do the same thing

Blenders and juicers work in very different ways. Of course, it is possible to use the same ingredients to produce a liquefied drink, but the similarities between the two appliances stops there.


Blenders pulverize fruit and vegetables into a thicker, gloopy drink. While this can be delicious, it can damage the living enzymes in the fruit and vegetables and does not extract the nutrients from the pulp, unless you opt for a high powered raw food blender such as the BioChef living food blenders, which are capable of extracting phytonutrients from fibre.



Removing the fibre from foods is bad – therefore, juicing is bad

While fibre does play an important role in a long-term, balanced diet, fibre can also block the absorption of healthy compounds in the digestive system. Juicing is the fastest way of ensuring that concentrated nutrients and enzymes get into the body.


Juicing can easily be integrated into a balanced, healthy diet which also includes foodstuffs containing fibre.


Juicing is too high in sugar, so mustn’t be healthy

Juicing does not involve adding any sugars or corn syrup, which is commonly found in many other popular drinks. A healthy juicing diet also relies as heavily on vegetables as it does on fruits.


Why can’t I simply buy supermarket juices?

Fresh juices and shop-bought juices can be as dissimilar as water and fizzy pop. Juices you might buy in the supermarket are more than likely to contain added sugars and/or corn syrup. They can also contain many other additional chemical products to alter the flavour and colour before being packaged.


But won’t there still be vitamins and nutrients in the juices?

The answer is, unfortunately, very little. To prolong the shelf life of a juice, manufacturers pasteurize their products – boiling them to kill off the bacteria. The knock on effect of this process is that the majority of the living enzymes and nutrients that are beneficial to the body are also destroyed in the process.


While the pasteurization process offers convenience, the health benefits are minimal compared to those delivered by a freshly pressed juice consumed the same day as it is squeezed.


What to juice

Pretty much all fruit and veg is fair game when it comes to juicing. While some with tougher skins may require peeling, most items can simply be juiced in their complete form.


Knowing what to expect from your juices is a matter of colour. Colour is nature’s way of signifying certain compounds and getting a balanced juicing diet can be done, in part, by eye – simply by using a combination of the various colours of the rainbow.


Orange – includes carrots, oranges, butternut squash, sweet potato

Orange fruit and vegetables are a great source of B vitamins, beta carotene, magnesium, calcium, folate, vitamin C and potassium.


Yellow – includes pineapple, yellow bell peppers, lemons, golden apples

Yellow indicates that a foodstuff contains the likes of B vitamins, beta carotene, folate, vitamins A and C.


Redincludes cherries, tomatoes, beets, cranberries, pomegranates

Delicious-looking red fruit and vegetables indicate calcium, folate, manganese, potassium protein, lucopene, vitamin C and betalains.


Purpleincludes, blueberries, purple kale, cabbage, turnip, aubergine, black plums

The deep purple colour in fruit and veg can be a sign of vitamin C, ellagic acid, lutein, resveratrol, quercetin and flavonoids.


Greenincludes lettuce, spinach, broccoli, kale, green apples, limes, grapes

Green is often considered a particularly healthy colour – and with good reason. These foods contain B vitamins, beta carotene, calcium, folate, iron, vitamin C, lutein and several other goodies.


White – Ginger root, onions, cauliflower, fennel, white cucumber

White can be an indicator of potassium, protein, vitamin C, beta-glucans, lignans and flavonoids.


When should I juice?

Just a brief glance around the Internet will bring up results for juices suitable at every time of day. From a cleansing breakfast juice of orange, carrot and ginger to a nutrition-packed green juice for lunch or a nutrient injection before dinner, there’s never a bad time of day to get juicing.


Crucially, cold press juicing offers much more flexibility than a centrifugal juicer. By reducing the friction and keeping the temperature low, fruit and vegetables do not biodegrade as fast. This means that a cold pressed juice can be consumed for several hours – and in some cases even 48 hours after being made.


While it is important to drink juices as soon as possible after squeezing, we all know that trying to find the time to juice when we are at work or out and about can be difficult. It is for that reason that masticating juicers produce delicious juicers with a significantly longer shelf life than centrifugal juicers.
